Instant Pot Chuck Wagon Dinner–An easy, flavorful, one pot meal with sausage, rice, beans and corn. With only 10 total ingredients this dinner comes together quickly.
Instant Pot Chuck Wagon Dinner
This Instant Pot chuck wagon dinner is full of flavor thanks to ground sausage. It’s a hearty dish with sausage, beans, rice and corn and tastes great served with Fritos and sour cream. It only has 10 total ingredients and comes together very quickly (only a 3 minute pressure cook time!). If you’re wanting to take a night off of cooking but don’t have that option this is a good lazy day dinner!
Ingredients you’ll need…
- 1 pound ground sausage–adds a lot of flavor! You can use breakfast country sausage or chorizo. You can also opt to use a pre-cooked smoked sausage.
- 1 cup diced onion–for flavor
- ¾ cup chicken broth–to bring the pot to pressure and to cook the rice
- ½ cup long grain white rice–you can also use jasmine or basmati rice. For brown rice you’ll need to increase cooking time to 22 minutes with a 10 minute natural pressure release.
- 1 (15 oz) can kidney beans, rinsed and drained–you can also use pinto or black beans
- 1 (15 oz) can corn, rinsed and drained–you can also use frozen corn or fresh corn
- 1 (8 oz) can tomato sauce–for tomato based flavor
- 1 Tbsp chili powder–for flavor
- ½ tsp black pepper–for flavor
- 1 green bell pepper, cored and diced–to add some color and veg
How to make Instant Pot Chuck Wagon Dinner…
- Turn Instant Pot to sauté setting. I used a 3 quart pot but you can also use a 6 or 8 quart pot. When the display says HOT add in the sausage and break it up. Add in the diced onion. Brown for about 5 minutes. Drain off excess grease (I didn’t do this step because there wasn’t that much grease).
- Stir in the chicken broth and scrape bottom of pot so that nothing is sticking. Sprinkle in the rice and gently press down with spoon to submerge. Don’t stir. This will help to prevent the burn error message.
- Dump beans, corn, tomato sauce, chili powder and pepper on top (layer the ingredients, don’t stir). Finish off by adding in the green peppers.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes. Move valve to venting. Remove the lid.
- Stir well. Serve and enjoy topped with a dollop of sour cream and Fritos chips, if desired.

I used my 3 quart Instant Pot Ultra*. You can also make this in the 6 or 8 quart pot.
